Okay, I figured out why the bodice mock-up did not fit around the waist.
When I altered the pattern, I mistakenly had it in my head that I was altering only one size up for the waist, rather than two. So... it fit at the bust, but not the waist, obviously. I am redrafting the pattern as we speak, and was lucky enough to find instructions on how to modify the back piece to fix the gaping problem (just a minor gap at the top of the back piece).
Hopefully, this will work...
